D\u00e9couper les choux en fines lani\u00e8res avec un couteau (il existe des r\u00e2pes \u00e0 chou mais je n&rsquo;en avais pas..)<br>Commencer par une couche de choux au fond de la jarre. Saupoudrer de sel, poivre, baies et condiments. Bien tasser avec une cuill\u00e8re en bois. Alterner les couches de choux, de sel et de condiments en tassant bien entre chaque couche. Finir par une couche de sel.<br>Poser une planchette ronde ou une soucoupe sur le chou et rajouter un poids par dessus (j&rsquo;ai mis un poids de 5 kilos provenant d&rsquo;une ancienne balance de m\u00e9nage). Recouvrir d&rsquo;un linge. Au bout de 24 heures, v\u00e9rifier que la saumure recouvre le choux, sinon rajouter un peu d&rsquo;eau bouillie.<br>La fermentation commence alors, et si tout se passe bien, la choucroute sera bonne \u00e0 consommer au bout d&rsquo;un mois environ.
