Faites chauffer l&rsquo;huile dans une po\u00eale et faites-y \u00e0 peine saisir le r\u00f4ti sur toutes ses faces, pendant 3 min, en \u00e9vitant de le piquer en le tournant. Le fait de le saisir \u00e0 l&rsquo;huile chaude forme autour de la viande une carapace qui emp\u00eache les sucs de s&rsquo;\u00e9chapper pendant la cuisson.<\/p>\n\n\n\n<p>Retirez le r\u00f4ti de la po\u00eale et placez-le dans un plat \u00e0 four. Salez-le, poivrez-le, \u00e9crasez deux gousses d&rsquo;ail et \u00e9talez-les dessus. Laissez cuire le r\u00f4ti pendant 1h &#8211; 20 min par livre (500g) &#8211; puis laissez-le reposer four \u00e9teint, pendant 5 min, avant de le servir. Vous aurez un r\u00f4ti saignant.
